Wine of the Month: 2023 Grenache + Red Wine Cranberry Sauce with honey
Our new 2023 Grenache is here, just in time for the holidays!
This crowd-pleasing Grenache is our third vintage and always sells out. Our style is lighter and fruiter, with ripe raspberry on the front, and a spicy, herbal finish.
At our recent wine release weekend, we paired this wine with a “Day after Thanksgiving” turkey slider. We wanted our cranberry sauce to be less sweet and more savory, so we created our own by adapting this Red Wine Cranberry Sauce with Honey Recipe from the New York Times. We cut back on the brown sugar and honey and then used the 2023 Grenache as the red wine. It was so simple and a perfect pairing!
Ingredients
2 (12-ounce) packages fresh cranberries (6 cups)
1 cup dark brown sugar
1 cup Spruce Hill 2023 Grenache (or other dry red wine)
1 tablespoon honey
4 (1/4-inch-thick) slices fresh ginger root, smashed
Pinch of Kosher salt
1/2 teaspoon black pepper
Preparation
In a medium pot over medium heat, combine the cranberries, sugar, red wine, 1/2 cup water, honey, ginger, and salt. Simmer gently until most of the cranberries have popped and the sauce is thick and syrupy, 20 to 30 minutes. Stir in the black pepper. Chill thoroughly before serving.
